Performance testing of new artificial olfactory reference materials in virgin olive oil sensory assessment

The use of reference materials for sensory evaluation virgin olive oils by tasters, panel leaders and trainers represents a fundamental tool to ensure the performance test in meeting regulatory demands protect quality product. Herein, procedure certification two, recently formulated, artificial olfactory (RMs) winey-vinegary rancid defects oil is presented. A technical protocol, consisting different steps aimed at evaluating representativeness defect, determining detection threshold estimating stability over time, was applied six panels involved H2020 OLEUM project. Considering results provided (e.g. terms percentages robust coefficient variation related median values perceived intensities attributes), can be considered reliable able characterize aroma that appear suitable their intended according international standards. possible introduction these new RMs support selection training group assessors increase control proficiency improve effectiveness method offering advantages such as reproducibility time and/or possibility purchase or self-preparation, thereby overcoming lack availability year-by-year current used references.
